Moisture is the biggest enemy of dry roasted moong dal, as it can lead to spoilage and mold growth. Pests like weevils can also easily penetrate cloth bags. Airtight containers, such as glass jars or plastic containers with tight-fitting lids, create a barrier against moisture, pests, and air, helping to maintain the dal's freshness, flavor, and texture for a longer period. Before storing, ensure the moong dal is completely cooled after roasting to prevent condensation inside the container.
Add a few dried red chilies or bay leaves to the container with the moong dal. These act as natural pest repellents and can help prevent infestations without affecting the flavor of the dal.
