A mandoline is a fantastic tool for quickly and evenly slicing fruits and vegetables. However, certain foods are not well-suited for it. Soft cheeses, such as mozzarella or brie, tend to stick to the blade and become a messy, uneven paste. Oily vegetables, like avocados, also present a challenge because their slippery texture makes them difficult to control, increasing the risk of your hand slipping. Finally, anything that is too small to be safely held with the hand guard should be avoided. Trying to grate small pieces of garlic or ginger, for example, is simply not worth the risk of cutting yourself. It's always better to use a different tool for these items.
Always use the hand guard that comes with your mandoline, even if you think you're being careful. A momentary lapse in concentration can lead to a serious cut. Never try to grate the last little bit of an item without the guard; it's better to discard it than risk injury.
