Moist cheese expands rapidly when exposed to hot oil. If the outer batter is too thin, or there are air gaps or cracks, the cheese can leak out, causing steam explosions and oil splatter. Overheating oil intensifies the problem, rapidly overcooking the outside before the inside has set.
