Use well-aerated batter, wet your hands before shaping, and fry in medium-hot oil for round, fluffy vadas.
Fluffy vadas come from urad dal batter ground with minimal water and whipped to trap air. Wet palms help shape without sticking. The oil should be around 165°C–175°C — too hot will brown too fast without puffing, too cool will absorb oil. Turn vadas gently while frying.
Rest the batter 10–15 minutes before frying to let trapped air develop structure.
